Separately, I’d like to say about the pan bottom. This small thread on the aluminum surface is also a professional sign. The point is that a gas stove has fire just along the burner contour. This wave-like thread on the pan bottom physically distributes fire from the center evenly over the entire surface of the pan. This reduces the risk of food burning. But the most important effect is the ability to prevent the pancake from sticking around the edges so that it can be easily turned over.
